Creating Celebration Cakes
Whenever I have the opportunity to get near to any wedding or birthday cakes, I become more conscious of the colours, originality and designs of the cakes. I believe there is no right or wrong to any designs cos its very much to individual taste, creativity and of course budget. But I do get to learn mistakes from others besides learning some special skills that I may be lacking.
Personally, I just love creating any celebration cakes, be it birthdays or weddings. Transforming a simple cake into something that can become a showcase takes lots of patience, creativity, love and passion. Be open, listen and accept criticsm, learning from mistakes and always strive to explore new ideas are some basic principles that I follow.

Certificate in Sugarcraft @ Cereal Tech
Course ended on 6th March 2010. On the last day of our course, we had to present a "Celebration Cake" as the end of course project. All of us were so busy preparing with our cake designs, making sugar flowers, shopping for ribbons etc and were worried if we could produce a decent piece. All except 2 of us are working full time so trying to complete the project can be very challenging. By noon 6th March, we were all ready to present our cakes,,,,and the end result......11 pieces of well-decorated cakes with unique and personalised designs were represented. Enjoy these pics.

Bread Making Course
My breads are always a flop! After attending this detailed course in bread making, then I realised all the common mistakes that I always make. With the careful supervision of Mr Tan who constantly motivate us with his positive remarks, our bread came out of the oven beatiful and with strong aroma. Mr Mike Flemming, the principal director was so proud of us.

Wedding Cake - Azhar & Seri 28th November 2009
The 3 tier wedding cake(6", 8" 10" covered in pastel orange sugar paste - decorated with combination of sugar and silk flowers.
Simply scattered with sugar pearls on the cakes. Little white flowers centred with silver sugar pearls compliment the ribbon (sugar paste) around the cakes. Simply nice!

Completion of Professional Diploma Course in Sugar Flowers Module
23rd Nov 2009 - Finally, completed the sugar flowers module. Thanks to Eunice, the course tutor, whose so creative, very patient and always willing to share her knowledge with the class. The wonderful coursemates-Wati, Magdalene and Eileen are so fun to be with and we all share the same passion in baking and cake decorating.

Shifa's Birthday Cake
Rich Chocolate Truffle. Made from fresh cream and dark chocolate with a dash of orange, for that tangy taste over chocolate sponge cake was baked on Saturday morning for collection in the evening. Heart shaped strawberries and chocolate sticks compliment the simple deco.

Upcoming Project
Family birthdays make me excited! I get to bake more cakes. Choosing a cake to bake and decorating it can be so challenging.
My nieces and nephews are good. They will tell me way in advance their cake preference, so thats easy. Their favorites are chocolate cakes...chocolates and more chocolates.....sigh.
1st project will be 2 birthdays and parents wedding anniversary to be celebrated in mid November. What cake shall I bake???? I'm thinking of Durian Delight!!!! Hopefully can get hold of good durians by then. Yum, yummm
2nd project will be gathering of my personal friends, my siblings and inlaws. Just a casual gathering, as I didn't have much time to catch up with friends before my retirement. So I've planned some good baking.........surprise! surprise!!!! Watch this space!

Hi, what along break. Ha...ha... busy organising stuff in facebook. Recently had the opportunity to attend baking classes conducted by other baking enthusiast and schools. Good experience, gather more important tips and of course new friends. Look at these pics of the recent classes that I've attended. Have you heard of steamed butter cream???? Here it is, interesting and refreshing.
Learnt new techniques on piping, preparation of butter steamed butter cream. The beatiful finish of the iced cream is just superb, clean...and no mess!!!

Hafiz's 24th Birthday
Happy Birthday Hafiz!!!!!! Papa, mama and adek wish you success and happiness, and we pray that your wishes will come thru'.
Here's the cake that Hafiz specially requested for his birthday....Sponge Cake layered with Fresh Cream and topped with Peaches....yummy!! We will soon taste the goodness when our pizza arrive.
Attended second lesson of Cake Decorating class. Very interesting and really fun. Making flowers from gum paste is like playing with clay. The beautiful roses and daisies just need a little patience and confidence. Covering cakes with rolled fondant can be easy if you know the tactics. Will post pictures of my decorated cakes upon completion of the class in another 3 weeks time. Oh yes, having the correct tools help, and by attending classes you'll learn better. Thanks Katherine, you're a wonderful teacher!
Friends have requested fo some recipes in my blog. Yes,,,,yes.. i must find time to write. Will love to share, cos when friends make an effort to try the recipes with great success, its an achivement! If not successful, we will all share and learn from mistakes.
Have you seen the pics of decorative cupcakes? They are lovely to look at and you just cannot bear to eat them!!!

Mothers Day
Happy mothers day to all mothers. Here's the cake that I baked and decorted for mum. Chocolate sponge cake, covered with chocolate butter cream piped into a basket and decorated with marzipan roses and strawberries.
Hows your mothers day celebration? As for me, its just like ordinary day, no special lunch or dinner. Hafiz got me candies meant for mothers day weeks ago cos he happened to bumped into the candy shop. As usual, busy the whole day baking for orders and trying to complete my homework on my cake deco class. Covering a dummy cake with fondant and marbling effect for cake base......took me like 2 hrs! Phew! thats done. One problem....how to bring 12 x 12 cake box to work and then to class on Tuesday!!!! Don with runny nose and persistent headache.....what a warm day!

Bz....bz...week
Hello,life has been busy for the last few weeks! Phew, JP Morgan run is over! Nowlooking forward to the ever popular ladie SHAPE RUN in July!What haveI been baking for the last few weeks????? Plenty.....Tiramisu Cake baked for tha recent family gathering was another big hit. The aroma of the Coffee was too strong for the weak heart, YOU JUST got to try it! Yesterday's cakes were....Marble cake and Blueberry Cheesecake. Turned out fine. No wonder my weekends are so tiring for me! Whenever I am alone at home, I will start browsing my recipe books and check on the ingredients available and there I go again...BAKE!
Another interesting class that I attended on last Wednesday...its cubcake decorations for celebrations...Look at how lovely the decorated cupcakes turned out to be! Just right for weddings and engagement gifts. Make nice gifts for friends on special occasions.
Managed to be up early for my 1 hr morning jog.

Busy weekend as usual, with part-time maid around, had to help with the housework. She's getting better with the cleaning, good job! Surprise! surprise, the jasmine plant by the bedroom planters are blooming again......the fresh sweet smelling of jasmine fills my room as the windows are opened on Saturday morning. What a lovely morning!
Holiday is coming this Friday and planning to bake vanilla cookies, decorated with icing. In the meantime, will check out wilton's websites for great recipe ideas. Will keep you updated on the cookies!

Last weekend baked some cupcakes for a friend as a surprise gift on her birthday. Well the easiest and fastest to make, with very basic ingredients. However, the creaming and decorating was time consuming. But the end result is superb! Just hope that she and family enjoyed the cake as much as I've enjoyed baking!

Today is a busy day. My sunday morning run started late......overslept...so lazy but forced hubby to accompany me down the park for a quick half hr run. Cook, clean the house and bake. Yes, cake of the day is Pandan Chiffon. Emm turned out just right!!! Soft, light and not too sweet. Instead of having to extract the pandan juice from the leaves, I used pandan paste (for the very first time)....and wow,,so easy, no mess and the colour is just right...not looking so artificial. My next attempt will be Durian Chiffon cake......

Hi the blueberry cheese cake class was a disaster. The number of participants were just too big....28!!! students to a hands-on class. That reminds me of my home econs class during school days! Worst.....my group got the wrong ingredients into the mixture, as they were not labelled. Could you tell the difference between icing sugar and corn flour when put side by side? If only the teacher herself conducted the class instead of getting another chef...things would be more orderly. Moreover the cake turned out to be just like the ones I use to bake where I got the recipes from internet and books. All you need to do is to bake a plain cheesecake, drizzle some blueberry pie topping and thats it. The only difference is the base is not from digestive biscuits.
Now got to really think twice before attending any baking classes...ensure that its really worth the money......

Marble cake is done this weekend. One and half portions make 2 rectangular baking tins....not bad. Need to improvise the recipe a little. Somehow the cocoa portion is a little too much making the cake looks more brown and the marbling effect not too obvious. No matter....the texture is soft and tasty. Tried a different butter this time ....product of NZ instead of product of Malaysia...buttery and smooth, doesn't get soft too quickly. Maybe can try for cookies and other cakes in future.

Beezee, beezee, received an order for Marble Cake this weekend, and Lapis Surabaya in mid-Feb. Got to start planning. Wonder if NTUC will start stocking up their supermarkets soon after CNY. Never visit the supermarkets days before CNY.......people are stocking up their homes with groceries and the staff were continuosly busy filling up the shelfs.
How much do the large eggs cost now????? Better go to the wholesaler!

Hello, I'm back after a really long brake. I've been actively baking....and ......baking....for friends, relatives birthdays, engagements, weddings or just to satisfy my silly cravings to BAKE! Seeing the beautiful end products is just enough!!!!
I recently baked Durian Delight cake and it was an instant hit. My little 12 year old nephew had 3 helpings, and kept asking for more. I actually made this for a family friend who was planning to visit on Sunday. So was the Lapis Surabaya and the chicken rice that I cooked.......sigh.....for some reason they finally didn't turn up. Sigh....sigh!!!!
How to ensure that mango mousse retains the colour-Yellow and not turn brown????? Mango mirror cake is one of favourite.... Its delicious, and the smooth sweet mang
ois so delicious.

Hello, welcome to my world of baking! Have you tried baking from scratch? That is you pick up a a recipe book, follow the steps and bake your first cake or cookies. Thats how I picked up my basic baking. Through many trials and errors, sometimes my cakes/cookies are ok, sometimes not.
Now i find time to attend baking classes in order to pick up baking and cooking tips from the expert. Using the tips I've gathered, I am now more confident to follow recipes from books.
Soon, I will be sharing with you some of these tips. So stay tune.

Splitting Cake Layers: Split cake by pulling a piece of heavy sewing thread horiontally, back and forth through the cake.
Leftover egg whites can be stored covered in the refrigerator 7 to 10 days. To freeze egg whites, place in a plastic ice cube tray, then remove the frozen cubes to a plastic freezer bag for storage. Thaw frozen whites in the refrigerator.
Over creaming causes the cake to sink when its baked, under creaming gives a stiff textured cake
Perfect Buttercream Icing: Beat the mixture for long enough. Aim to beat it for several minutes until it is very smooth and creamy. Ensure that icing sugar is sifted (perferably twice) .
